Acquaint yourself with a very old, mostly forgotten class of cocktail. Tart but balanced.
During prohibition, Charles H. Baker travelled the world in search of exotic alcoholic beverages - Released in 1946, The Gentleman's Companion: The Exotic Drinking Book is the summation of Baker's drinking experiences abroad. By Baker's account, he was introduced to this cocktail by Facundo Barcardi himself.
The Never Daisy de Santiago is a more contemporary take on this traditional rum cocktail. Serving it straight up on egg white allows it to become lighter and more floral.
